Ingredients:
- - 1 10 oz. can Valley Fresh Premium Chunk White Chicken, drained, cut into bite size pieces
- - 1 cup crumbled reduced-fat Feta cheese
- - 1 3.25 oz. can sliced ripe black olives
- - 1 cup grape style tomatoes
- - 1 cup diced cucumbers with peel
- - 1/2 cup sliced red onion
- - 3 cups cooked gluten-free Rotini pasta, chilled
- - 1/2 cup Carapelli Premium Extra Virgin olive oil
- - 1/2 cup white whine vinegar
- - 1 tablespoon lemon juice
- - 1 teaspoon minced garlic
- - 1 teaspoon dried oregano leaves
- - 1/2 teaspoon salt
Instructions:
In bowl, combine gluten-free pasta, chicken, olives, tomatoes, cumcumber, red onion and Feta cheese. In another bowl, whisk together the dressing ingredients. Pour dressing over the pasta mixture and lightly toss until well coated. Chill pasta mixture until ready to serve.
