Ingredients:
- - 1 tablespoon CARAPELLI® Premium Extra Virgin Olive Oil
- - 1 large green bell pepper, chopped
- - 1 medium onion, chopped
- - 2 (10 ounce) cans VALLEY FRESH® 100% Natural White Chicken, drained
- - 1 (28 ounce) can crushed tomatoes
- - 2 tablespoons gluten-free Italian tomato paste
- - 2 cloves of garlic, minced
- - 1-1/2 teaspoons dried basil
- - 1/4 teaspoon dried thyme
- - 1/4 teaspoon salt
- - 1/8 teaspoon crushed red pepper
- - 6 cups cooked brown rice or 16 ounces cooked gluten-free pasta
- - 1/2 cup grated reduced-fat Parmesan cheese
Instructions:
In large saucepan, heat olive oil over medium heat and sauté onion and green pepper for 3-4 minutes, until softened. Add chicken, tomatoes, tomato paste, garlic, basil, thyme, salt, and red pepper. Bring to a boil, then reduce heat and simmer for 10 minutes. Serve sauce hot over rice or pasta. If desired, sprinkle with Parmesan cheese before serving.
