Ingredients:
- - 2 tablespoons CARAPELLI® Premium Extra Virgin Olive Oil
- - 3 plum tomatoes, peeled, seeded and diced
- - 1/2 cup sun-dried tomatoes, julienned
- - 1 (10 ounce) can VALLEY FRESH® 100% Natural White Chicken, drained and diced
- - 2 tablespoons green onions, sliced
- - 1/2 cup gluten-free chicken broth
- - 1 tablespoon fresh parsley, chopped
- - 1/2 pound gluten-free fusilli (or any other small shaped gluten-free pasta), cooked according to package directions
Instructions:
Heat olive oil in skillet; add fresh tomatoes and sauté for 30 seconds. Add sun-dried tomatoes, chicken, and green onions; sauté for another 30 seconds. Add chicken broth. Simmer gently for 3-5 minutes. Season with salt and pepper to taste. Remove chicken mixture from heat; add parsley. Toss chicken mixture with cooked pasta and serve immediately.
