Ingredients:
- - 1 (10 ounce) can VALLEY FRESH® 100% Natural White Chicken, drained
- - 1 teaspoon thyme
- - 1/2 teaspoon pepper
- - 1 cup shredded reduced-fat mozzarella cheese
- - 2 cups corn or mixed vegetables (If frozen, cooked per package instructions. If canned, uncooked.)
- - 3 cups of prepared mashed potatoes
- - 2 cups shredded reduced-fat Cheddar cheese
Instructions:
In bowl, combine chicken, thyme, pepper, cheese and vegetables. Place chicken mixture into a 2-quart casserole dish. In another bowl, combine potatoes with cheese. Spoon potato mixture over the filling. Bake at 350°F for about 25 minutes, or until filling is hot and potatoes are golden brown.
