Ingredients:
- - 4 eggs
- - 1/4 cup milk
- - 1 (10 ounce) can VALLEY FRESH® 100% Natural White Chicken, drained
- - 1/4 cup onion, chopped
- - 1/4 cup green bell pepper, chopped
- - 1/4 cup fresh mushrooms, chopped
- - 1/4 teaspoon garlic powder
- - Cooking spray
- - 1/4 cup tomatoes, diced
- - 1/4 shredded reduced-fat shredded Cheddar cheese
Instructions:
In medium-size bowl, beat eggs and milk. Stir in the chicken, onion, green peppers, mushrooms, and garlic powder. Melt half of the butter in large skillet. Once pan is hot, pour half of the omelet mixture into pan. Cook egg mixture over medium heat. As egg mixture sets, begin running a spatula around the outside edges; tilt pan to allow the uncooked portion of egg to flow underneath. Repeat with remaining egg mixture to make a second omelet. Top each omelet with diced tomatoes and shredded cheese.
