Ingredients:
- - 1 (6 ounce) bag of fresh spinach
- - 1 tablespoon CARAPELLI® Premium Extra Virgin Olive Oil
- - 2-3 cloves of garlic, minced
- - 1/2 cup gluten-free pizza sauce
- - 1 (5 ounce) can VALLEY FRESH® 100% Natural White Chicken, drained
- - 1 (4 ounce) container of basil and tomato Feta cheese
- - 8 (6 inch) corn tortillas
Instructions:
In skillet, sauté spinach and garlic in olive oil until slightly wilted, about 3-4 minutes; drain and set aside. Spread 2 tablespoons of pizza sauce onto each of 4 tortillas. Divide filling ingredients uniformly between the 4 tortillas. Spoon spinach and garlic mixture on each tortilla. Top with chicken and cheese. Cover with the remaining tortillas. Place filled tortillas in a preheated indoor grilling machine, sandwich maker or skillet. Cook until heated through and cheese is melted, about 2-3 minutes. Cut into wedges and serve immediately.
