Valley Fresh Santa Fe Chicken Pita

Ingredients:

  • 1 10 oz. can Valley Fresh Premium Chunk White Chicken, drained, cut into bite size pieces
  • 1 cup drained canned black beans, rinsed
  • 1 cup frozen yellow sweet corn, thawed
  • 1 cup chopped red bell peppers
  • 1/4 cup sliced green onions, bulbs and tops
  • 1 cup Chi-Chi's salsa
  • 6 whole wheat pita breads, halved crosswise
  • Reduced-fat ranch dressing (optional)

Instructions:

Lightly toss together all ingredients except pita bread. Split pita breads halves to form pockets. Fill pockets with chicken filling. Garnish with salsa and ranch dressing, as desired.
