Valley Fresh® Easy Mexican Chicken

Ingredients

1½ teaspoons olive oil

½ medium onion, diced

½ cup frozen corn

1½ teaspoons cumin

10 ounces VALLEY FRESH® Organic Chicken Breast, drained

1 (15.5-ounce) can black beans, rinsed and drained

1 (14.5-ounce) can diced tomatoes, drained

Shredded cheese

Soft tortillas, rice or tortilla chips

Instructions

  1. Heat olive oil in large skillet. Add onion and cook, stirring occasionally, for 2 to 3 minutes.
  2. Add corn and cumin and cook for 1 minute.
  3. Add chicken, black beans and tomatoes and cook 4 to 5 minutes, stirring occasionally.
  4. Add cheese and cook to combine for one minute.
  5. Serve on tortillas, rice or tortilla chips, if desired.
