Valley Fresh® Chicken Salad Sandwich

Ingredients

2 (5-ounce) cans VALLEY FRESH® 100% Natural Chicken Breast, well drained

cup finely chopped red and/or yellow bell pepper

¼ cup finely chopped red onion

¼ cup chopped roasted cashews

¼ cup plain Greek yogurt

3 tablespoons mayonnaise

1 tablespoon finely chopped fresh dill

1 teaspoon hot pepper sauce

½ teaspoon grated lemon peel

Coarse salt and freshly ground pepper to taste

Instructions

Mix chicken, bell pepper, onion and cashews in a medium bowl. Stir in yogurt, mayonnaise, dill, hot pepper sauce, lemon peel, salt and pepper until well blended.

Serve in sandwiches, on flatbread or a salad on greens or stuffed into a large tomato.
